Tofu Filling

  • 1 (14-ounce) block extra-firm tofu, pressed and crumbled
  • 1 tablespoon olive oil
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ¼ teaspoon chili powder
  • Salt and black pepper to taste

For Serving

  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce or cabbage
  • ½ cup diced tomatoes or salsa
  • ½ avocado, sliced
  • Fresh cilantro, for garnish
  • Lime wedges


Instructions

  1. Heat the Oil and Cook Tofu: Heat olive oil in a skillet over medium heat. Add the crumbled tofu and cook for 4–5 minutes, stirring occasionally, until it begins to brown and crisp slightly.
  2. Add Seasonings: Stir in soy sauce, tomato paste, smoked paprika, cumin, garlic powder, chili powder, salt, and black pepper. Mix well to combine all the flavors evenly into the tofu.
  3. Continue Cooking: Cook the tofu mixture for another 5–7 minutes, stirring occasionally until the tofu is golden and the spices are fragrant, ensuring the tofu is cooked through and flavorful.
  4. Warm the Tortillas: Warm the corn or flour tortillas in a dry skillet over low heat or briefly microwave them until pliable and warm.
  5. Assemble the Tacos: Spoon a generous amount of the seasoned tofu onto each tortilla. Top with shredded lettuce or cabbage, diced tomatoes or salsa, avocado slices, and fresh cilantro.
  6. Serve: Squeeze fresh lime juice over each taco for brightness and serve immediately while warm.
