This delicious Toffee Chex Mix combines crunchy Rice and Corn Chex cereals with pretzels, nuts, and toffee bits, all coated in a buttery toffee sauce and finished with a drizzle of melted semi-sweet chocolate. It’s a perfect sweet and salty snack that’s easy to prepare and great for sharing at parties or as an everyday treat.

Ingredients

Scale

Mix Ingredients

  • 4 cups Rice Chex cereal
  • 4 cups Corn Chex cereal
  • 1 cup pretzels (twists)
  • 1 cup mixed nuts (optional)
  • 1 cup toffee bits

Toffee Sauce

  • 1 cup unsalted butter (2 sticks)
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Chocolate Drizzle

  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the mix.
  2. Combine Dry Ingredients: In a large mixing bowl, gently stir together the Rice Chex, Corn Chex, pretzels, mixed nuts if using, and toffee bits until well mixed.
  3. Melt Butter and Prepare Toffee Sauce: In a medium saucepan, melt the unsalted butter over medium heat. Once melted, add the brown sugar, granulated sugar, and salt. Stir continuously until the mixture begins to boil. Let it boil for 2 minutes without stirring to develop the toffee flavor.
  4. Add Vanilla: Remove the saucepan from heat and stir in the vanilla extract to enhance the flavor of the sauce.
  5. Coat Cereal Mixture: Immediately pour the hot toffee sauce over the cereal and pretzel mixture in the large bowl. Use a spatula to gently fold and coat all pieces evenly with the sticky toffee mixture.
  6. Spread and Prepare for Baking: Spread the coated mixture evenly onto a large baking sheet lined with parchment paper or a silicone mat to prevent sticking.
  7. Bake: Bake in the preheated oven for 15 to 20 minutes. Stir the mixture halfway through the baking time to ensure even toasting and coating.
  8. Cool Mixture: Remove the baking sheet from the oven and allow the toffee Chex mix to cool completely on the sheet to set the coating.
  9. Melt Chocolate: While the mixture cools, melt the semi-sweet chocolate chips in a microwave-safe bowl by heating in 30-second intervals, stirring between each until smooth and fully melted.
  10. Drizzle Chocolate: Drizzle the melted chocolate evenly over the cooled toffee Chex mix and allow the chocolate to harden and set.
  11. Serve or Store: Once the chocolate has hardened, break the mix into pieces. Serve immediately or store in an airtight container for up to two weeks.

Notes

  • If you prefer a nut-free version, simply omit the mixed nuts.
  • For extra crunch, you can add additional pretzels or nuts to the mix.
  • Ensure to stir the toffee sauce continuously during boiling to prevent burning.
  • Allow the mix to cool completely before drizzling the chocolate to avoid melting it.
  • Store the mix in an airtight container at room temperature for optimal freshness.
