Description

A hearty and comforting Tater Tot Sausage Breakfast Casserole featuring savory breakfast sausage, crispy tater tots, and a rich blend of cheddar and mozzarella cheeses baked to perfection in a creamy egg and milk mixture. Perfect for a filling breakfast or brunch that serves the whole family.

Ingredients

Scale

Meat

  • 2 lb hot breakfast sausage

Vegetables & Potatoes

  • 1 (30–32 oz) bag frozen tater tots

Dairy

  • 1½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 8 eggs
  • 2 cups milk

Spices & Seasonings

  • 1 tsp salt
  • ½ tsp pepper
  • ¼ tsp garlic powder
  • ¼ tsp onion powder

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and lightly spray a 9×13-inch baking pan with cooking spray to prevent sticking.
  2. Cook Sausage: In a large skillet, cook the hot breakfast sausage over medium heat until it is no longer pink, about 7-10 minutes, stirring occasionally. Drain any excess fat to keep the casserole from being greasy.
  3. Combine Ingredients: In a large mixing bowl, mix together the cooked sausage, frozen tater tots, shredded cheddar cheese, and shredded mozzarella cheese until evenly distributed. Transfer this mixture into the prepared baking pan and spread it out evenly.
  4. Prepare Egg Mixture: In a separate bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until the mixture is smooth and well blended.
  5. Assemble Casserole: Pour the egg mixture evenly over the sausage and tater tot layer in the baking pan to ensure all ingredients are well combined.
  6. Chill if Needed: If you’re not ready to bake immediately, cover the pan with foil or plastic wrap and refrigerate until needed. This step is optional but helpful for prepping ahead of time.
  7. Bake: Bake the casserole uncovered at 350°F for 60 to 70 minutes, or until the eggs are fully set and the top is lightly golden brown. A knife inserted in the center should come out clean.
  8. Serve: Let the casserole cool slightly before slicing into 8 servings and serving warm.

Notes

  • You can substitute regular breakfast sausage with turkey sausage for a leaner option.
  • Feel free to add diced onions or bell peppers to the sausage for extra flavor and veggies.
  • Make sure to cook the sausage thoroughly to avoid any raw meat flavor in the casserole.
  • Leftovers can be refrigerated for up to 3 days and reheated in the microwave or oven.
  • For gluten-free version, confirm that your sausage and seasonings do not contain gluten.
