Ingredients
For the Taco Seasoned Beef:
- 1 pound ground beef
- 1 packet taco seasoning mix
- 3/4 cup water
For the Salad:
- 6 cups chopped romaine lettuce
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1 cup grape tomatoes, halved
- 1 cup sour cream
- 1 cup tortilla chips, crushed
- 1/2 cup chopped red onion (optional)
- 1 cup shredded Monterey Jack cheese
Instructions
- Cook the Taco Seasoned Beef: In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease and stir in taco seasoning and water. Simmer for 5–7 minutes until thickened.
- Prepare the Salad: Spread the chopped romaine lettuce on a large platter. Arrange the black beans in the upper left corner. Add dollops of sour cream over the beans to resemble stars. Create red and white stripes with grape tomatoes and shredded cheeses. Scatter the taco-seasoned beef across the tomato stripes. Top with crushed tortilla chips before serving.
Notes
- You can customize this salad with other toppings like avocado, corn, or jalapeños.
- For a vegetarian version, omit the beef and add more beans or grilled veggies.
