Description
This Taco Bell Beefy Melt Burrito is a delicious homemade version of the popular fast-food burrito, combining seasoned ground beef, Mexican rice, beans, crunchy chips, and melted cheese in a warm flour tortilla. Perfect for a quick weeknight meal or casual gathering, this recipe is flavorful, easy to prepare, and customizable with optional toppings like sour cream and salsa.
Ingredients
Beef Mixture
- 1 pound lean ground beef
- 1 (1 oz) packet taco seasoning
- ¼ cup water or beef broth
- 1 cup refried beans (optional)
Other Fillings
- 2 cups cooked Mexican rice (or instant)
- 4 burrito-sized flour tortillas
- 2 cups Fritos or Doritos chips
- 1 cup cheese dip (warmed, like Tostitos)
- 1 cup shredded Mexican cheese blend
- ½ cup sour cream
Optional
- Salsa (for serving)
Instructions
- Cook the Beef: Brown the ground beef in a sauté pan over medium heat, breaking it apart until no longer pink, about 5-7 minutes. Stir in the taco seasoning and water or beef broth, then simmer for 1 minute to combine flavors. If using, mix in the refried beans until well incorporated.
- Prepare the Rice: Cook the Mexican rice according to package instructions or use leftover rice, making sure it’s warm and ready to assemble in the burrito.
- Warm the Tortillas: Wrap the flour tortillas in a damp paper towel and microwave for about 30 seconds to make them pliable and easy to fold.
- Assemble the Burritos: Lay one warmed tortilla flat and layer the beef mixture, warm Mexican rice, Fritos or Doritos chips, warm cheese dip, shredded cheese, and sour cream evenly across the center.
- Roll the Burritos: Fold in the sides of the tortilla and roll it up tightly from the bottom to fully enclose the fillings. Repeat this process with the remaining tortillas and ingredients.
- Optional Heating: Enjoy the burritos as they are or heat them briefly in a skillet for a crispy texture on the outside. Serve with salsa if desired.
Notes
- Using beef broth instead of water with the taco seasoning adds richer flavor.
- Refried beans are optional but add creaminess and extra protein.
- For a spicier option, add jalapeños or hot sauce inside the burrito.
- Heating the burritos in a skillet after assembling gives a nice crispy exterior.
- Substitute corn tortillas for a gluten-free option if needed, but they may be more fragile when rolling.
