Description

These Strawberry Lemonade Jello Shots are a fun and festive party treat combining the zesty brightness of fresh lemons, juicy strawberries, and a splash of vodka. Made by blending strawberries with water, mixed with lemonade and vodka, then heated with gelatin and set in hollowed lemon halves, they offer a refreshing and visually appealing way to enjoy a classic cocktail flavor in a bite-sized form.

Ingredients

Scale

Produce

  • 6 lemons
  • 2 cups fresh strawberries, sliced

Liquids

  • 2 tbsp water
  • 1 cup lemonade (homemade or store-bought like Simply Lemonade)
  • 1 cup vodka

Other

  • 2 packets Knox unflavored gelatin

Instructions

  1. Blend strawberries and water: In a blender, combine the sliced fresh strawberries and 2 tablespoons of water. Blend until smooth to make a fresh strawberry puree base for the jello shots.
  2. Mix in lemonade and vodka: Pour in 1 cup of lemonade and 1 cup of vodka into the blended strawberry mixture and mix well to combine the flavors.
  3. Heat the mixture: Transfer the strawberry-lemonade-vodka mixture to a saucepan and heat it over medium heat, stirring occasionally, until it begins to steam but does not boil.
  4. Whisk in gelatin: Once steaming, whisk in the 2 packets of Knox unflavored gelatin quickly until fully dissolved and smooth. Then remove from heat and set aside.
  5. Prepare lemons: Slice each lemon in half and carefully scoop out the insides, leaving hollow lemon shells to be filled with the jello mixture.
  6. Stabilize lemons: Place the hollowed lemon halves into a muffin tin to keep them upright and stable during refrigeration.
  7. Pour jello mixture: Evenly pour the gelatin mixture into the hollow lemon halves in the muffin tin.
  8. Refrigerate to set: Place the muffin tin in the refrigerator and chill for 2-3 hours until the jello shots are fully set.
  9. Serve: Before serving, cut the lemon halves into quarters or smaller pieces for easy consumption, and enjoy your refreshing strawberry lemonade jello shots.

Notes

  • Ensure the gelatin dissolves completely in the warm mixture to prevent lumps in the jello shots.
  • You can substitute vodka with any other clear spirit if desired.
  • Use fresh lemons for the best flavor and sturdy shells.
  • Chill in the refrigerator for at least 2 hours to ensure the jello shots are firm.
  • Cut the lemon halves into smaller wedges before serving to make them easier to eat.
