Ingredients
Sticky Date Mixture
- 200 g (7 oz) pitted dates, chopped
- 250 ml (1 cup) boiling water
- 1 teaspoon baking soda
Batter
- 100 g (1/2 cup) unsalted butter, softened
- 150 g (3/4 cup) brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 200 g (1 1/2 cups) all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cardamom
- Zest of 1 orange
- Zest of 1 lemon
- Pinch of salt

Instructions
- Preheat Oven and Prepare Tray: Preheat your oven to 180°C (350°F). Grease and line a rectangular baking tray (approximately 20 x 30 cm or 8 x 12 inches) with parchment paper to prevent sticking.
- Soften Dates: In a bowl, combine the chopped dates with the boiling water and baking soda. Let this mixture sit for 10-15 minutes so the dates soften and infuse the liquid.
- Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and brown sugar together until light and fluffy, which should take about 3-5 minutes. This step creates a creamy base for the batter.
- Add Eggs and Vanilla: Add the eggs one at a time to the butter mixture, mixing thoroughly after each addition. Stir in the vanilla extract to incorporate the flavor evenly.
- Sift Dry Ingredients: In a separate bowl, sift together the flour, baking powder, ground cardamom, orange zest, lemon zest, and a pinch of salt to ensure an even distribution of ingredients and no lumps.
