Ingredients
Sauce
- 4 tablespoons mayonnaise
- 1 tablespoon mustard
- 1 tablespoon lemon juice

Steak and Onions
- 28 ounces ribeye steak, shaved
- 1 tablespoon Montreal steak seasoning (adjust to taste)

- 1 tablespoon vegetable oil
- 1/2 yellow onion, thinly sliced
Eggs
- 4 large eggs
- salt, to taste
- pepper, to taste
- 1 tablespoon butter
Assembly
- 4 plain bagels, sliced and lightly toasted
- 8 slices American cheese
Instructions
- Prepare the Sauce: In a small bowl, combine the mayonnaise, mustard, lemon juice, paprika, and dried dill. Mix well to create a flavorful sauce and set it aside for later assembly.
- Season the Steak: Place the shaved ribeye steak in a medium bowl. Add the Montreal steak seasoning, salt, and pepper and toss thoroughly to coat the steak pieces evenly in the seasonings.
- Cook Steak and Onions: Heat the vegetable oil in a large skillet over medium-high heat. Add the seasoned steak and sliced onions. Cook, stirring occasionally, until the steak is browned and fully cooked through and the onions have softened and caramelized, approximately 5 to 7 minutes. Remove from the skillet and set aside.
- Fry the Eggs: Using the same skillet, melt the butter over medium heat. Crack the eggs into the skillet, season with salt and pepper, and fry until the whites are set but the yolks remain runny. Carefully remove from heat and set aside.
- Assemble the Sandwich: Spread a generous amount of the prepared sauce onto the bottom half of each toasted bagel. Layer on the cooked steak and caramelized onions evenly. Place two slices of American cheese on top so that the residual heat melts the cheese slightly. Add a fried egg on top of the cheese.
- Finish and Serve: Top with the top half of the bagels to complete the sandwiches. Serve immediately while warm and enjoy your delicious steak, egg, and cheese bagel sandwich.
