Description

This Spinach Frittata is a delicious and healthy dish perfect for breakfast, brunch, or a light dinner. Combining fresh spinach, sautéed onions, eggs, and your choice of feta or cheddar cheese, it offers a flavorful and protein-packed meal that is easy to prepare and bake in one skillet.

Ingredients

Scale

Vegetables

  • 4 cups fresh spinach
  • 1/2 medium onion, chopped

Egg Mixture

  • 6 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste

Other

  • 1 cup shredded cheese (feta or cheddar)
  • 2 tbsp olive oil

Instructions

  1. Preheat and Prepare Skillet: Preheat your oven to 350°F (175°C). Heat an oven-safe skillet over medium heat and add the olive oil to warm it up.
  2. Sauté Onions and Spinach: Add the chopped onion to the skillet and cook until translucent, about 5 minutes. Then add the fresh spinach and cook until wilted, approximately 3 minutes.
  3. Mix Eggs and Milk: In a bowl, whisk together the eggs and milk, seasoning the mixture with salt and pepper to your preference.
  4. Combine and Cook: Pour the egg mixture evenly over the sautéed onions and spinach in the skillet. Sprinkle the shredded cheese on top. Cook undisturbed on the stovetop for about 5 minutes until the edges begin to set.
  5. Bake in Oven: Transfer the skillet to the preheated oven and bake for 15-20 minutes until the frittata is puffed and golden brown on top.
  6. Cool and Serve: Allow the frittata to cool slightly before slicing it into wedges. Serve warm or at room temperature for a delicious meal.

Notes

  • You can substitute milk with any plant-based milk to make it dairy-free.
  • Feel free to add herbs such as parsley or chives for additional flavor.
  • Use an oven-safe skillet such as cast iron to ensure safety when transferring to the oven.
  • Letting the frittata cool a bit helps it set fully and makes slicing easier.
  • Leftovers can be stored in the fridge for up to 3 days and reheated in the oven or microwave.
