Chicken:

  • 1 ½ pounds boneless, skinless chicken thighs or breasts

Sauce:

  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons sriracha or other hot sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon minced garlic
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Instructions

  1. Season the Chicken: Season the chicken with salt and pepper.
  2. Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Sear the chicken on both sides until golden brown, about 3–4 minutes per side. Remove and set aside.
  3. Prepare the Sauce: In the same skillet, add pineapple juice, brown sugar, soy sauce, sriracha, rice vinegar, garlic, and ginger. Bring to a simmer and cook for 3–4 minutes. Stir in the cornstarch slurry and cook until the sauce thickens slightly.
  4. Combine and Simmer: Return the chicken to the pan, coat with the sauce, reduce heat to low, and simmer for 10–12 minutes until the chicken is cooked through and tender.
  5. Serve: Serve hot, garnished with sliced green onions and pineapple chunks if desired.
