Gelatin

- 3 tablespoons cold water
Instructions
- Combine Base Ingredients: In a saucepan, mix together the heavy cream, whole milk, granulated sugar, loose rooibos tea, and a pinch of salt.
- Heat the Mixture: Warm over medium heat, stirring gently until the sugar dissolves and the mixture is steaming but does not boil.
- Steep the Tea: Remove the saucepan from heat and let the rooibos tea steep in the mixture for about 10 minutes to release its flavor.
- Bloom the Gelatin: In a small bowl, sprinkle the unflavored gelatin over cold water and let it sit undisturbed for about 5 minutes to soften.
- Strain the Mixture: Pour the cream mixture through a fine sieve into a fresh saucepan to remove the tea leaves.
- Dissolve Gelatin and Add Flavor: While the mixture is still warm, stir in the bloomed gelatin and vanilla extract until fully dissolved and smooth.
- Pour into Molds: Pour the panna cotta mixture into individual cups or ramekins and allow it to cool at room temperature.
- Chill to Set: Cover with plastic wrap and refrigerate for at least 4 hours until the panna cotta is set firmly.
- Serve: To serve, run a knife around the edges and invert onto dessert plates or serve directly in cups. Optionally, garnish with fresh berries or a drizzle of honey.
