Ingredients
Dry Ingredients
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
Wet Ingredients
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup melted butter
Additional Ingredients
- 2 medium apples, peeled and diced
- Oil for frying (enough to fill skillet about 2 inches deep)
Vanilla Glaze
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Mix dry ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined to ensure an even distribution of the leavening and spices.
- Combine wet ingredients: In a separate bowl, beat together the milk, eggs, vanilla extract, and melted butter. Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Be careful not to overmix to keep the fritters light and tender.
- Fold in apples: Gently fold the diced peeled apples into the batter, making sure they are evenly distributed without crushing them.
- Heat oil: Pour oil into a deep skillet or pot to a depth of about 2 inches and heat it to 350°F (175°C). Use a kitchen thermometer to maintain the correct temperature for frying.
- Fry fritters: Using a spoon, drop spoonfuls of batter carefully into the hot oil in batches. Fry for about 2-3 minutes per side until the fritters are golden brown and cooked through. Avoid overcrowding the pan to maintain oil temperature.
- Drain excess oil: Remove fritters from oil with a slotted spoon and place them on paper towels to drain any excess oil, keeping them crisp and not greasy.
- Prepare the glaze: In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth and pourable.
- Glaze and serve: Drizzle the warm fritters with the vanilla glaze just before serving to add a sweet finishing touch that complements the cinnamon and apples beautifully.
Notes
- Maintain the oil temperature at 350°F to ensure the fritters cook evenly without absorbing too much oil.
- You can use Granny Smith apples for a tart contrast or sweeter apple varieties like Fuji or Honeycrisp, depending on your preference.
- Ensure batter is not overmixed to keep fritters light and fluffy.
- Serve fritters warm for the best flavor and texture.
- Leftover fritters can be stored in an airtight container and reheated in a toaster oven to retain crispness.
