Description

Delight in these rich and gooey S’mores Brownies, combining the classic flavors of graham crackers, chocolate, and toasted marshmallows in a luscious brownie base. Perfect for satisfying your sweet tooth with a nostalgic twist.

Ingredients

Scale

Crust Ingredients

  • 12 full-size graham crackers
  • 2 tablespoons granulated sugar
  • 6 tablespoons unsalted butter, melted

Brownie Ingredients

  • ½ cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup bittersweet chocolate chips

Topping

  • 2 heaping cups mini marshmallows (about 3.5 ounces)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper to prevent sticking and make removal easier.
  2. Make the Crust: Using a food processor, blend the graham crackers and 2 tablespoons of granulated sugar until you have fine crumbs. Add the melted butter and pulse until combined. Press this mixture firmly and evenly into the bottom of the prepared pan to form the crust.
  3. Bake Crust: Bake this crust in the preheated oven for 15-20 minutes, or until it is lightly golden around the edges. Remove from oven and set aside to cool slightly.
  4. Prepare Brownie Batter: In a mixing bowl, whisk together the vegetable oil, 1 cup sugar, eggs, and vanilla extract until well combined. Stir in the cocoa powder, all-purpose flour, baking powder, salt, and chocolate chips until the batter is smooth and evenly mixed.
  5. Assemble and Bake Brownies: Pour the prepared brownie batter over the cooled graham cracker crust, spreading it evenly. Bake in the oven for 30-40 minutes, or until the brownies are set but still moist.
  6. Add Marshmallow Topping: Remove the brownies from the oven and evenly sprinkle the mini marshmallows on top. Place the pan under the broiler for about 2 minutes, watching closely, until the marshmallows are golden brown and toasted.
  7. Cool and Serve: Allow the brownies to cool in the pan for at least 30 minutes to set completely before slicing into 16 squares and serving.

Notes

  • Use an 8×8 inch pan for perfect thickness and baking time.
  • Watch the marshmallows carefully under the broiler to prevent burning.
  • For extra fudginess, do not overbake the brownies; a toothpick should come out with a few moist crumbs.
  • To make cutting easier, chill the brownies slightly before slicing.
  • This recipe can be made with vegan substitutes for eggs and butter to accommodate vegan diets.
