Ingredients
For the Chicken:
- 2 pounds boneless, skinless chicken thighs or breasts
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Juice of 1 lemon
- 1/2 cup chicken broth
- 1 red onion, thinly sliced
For Serving:
- Pita bread or flatbread
- Chopped romaine lettuce
- Diced tomatoes
- Cucumber slices
- Crumbled feta
- Tzatziki sauce
Instructions
- Prepare the Chicken: Place chicken in the slow cooker.
- Season the Chicken: Mix olive oil, garlic, oregano, cumin, paprika, salt, pepper, lemon juice, and chicken broth; pour over the chicken.
- Cook: Add sliced onions, cover, and cook on low for 6–7 hours or high for 3–4 hours.
- Shred the Chicken: Remove, shred, and return to the slow cooker.
- Assemble Gyros: Warm pita, layer chicken, lettuce, tomato, cucumber, feta, and tzatziki sauce.
