Ingredients
Chicken and Vegetables
- 4 boneless skinless chicken breasts
- 2 pounds baby gold potatoes, cut into 1-inch pieces
- ½ pound fresh green beans
- 2 tablespoons oil
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- ¼ teaspoon paprika
- 2 tablespoons freshly grated Parmesan cheese
Honey Garlic Sauce
- 3 tablespoons salted butter
- ½ cup honey
- 2 teaspoons minced garlic
- â…› teaspoon pepper
- 1 teaspoon salt
Instructions
- Preheat and Prepare Pan: Preheat your oven to 400°F (200°C). Grease a large sheet pan with cooking spray and set it aside to prevent sticking.
- Make the Honey Garlic Sauce: In a medium saucepan, melt the butter over medium heat. Stir in honey, minced garlic, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about a minute. Remove from heat and set the sauce aside.
- Prepare the Chicken and Vegetables: Pound the chicken breasts to an even thickness to ensure uniform cooking. Lay the chicken breasts in the center of the prepared sheet pan. Arrange the baby potatoes and green beans on each side of the chicken. Drizzle the oil evenly over the chicken and veggies. Season everything with salt and pepper.
- Season the Dish: In a small bowl, mix together the Italian seasoning, garlic powder, and paprika. Sprinkle this seasoning mixture evenly over the chicken, potatoes, and green beans. Then pour the prepared honey garlic sauce over the chicken breasts.
- Bake: Place the sheet pan uncovered in the preheated oven and bake for 22 to 25 minutes, or until the potatoes and green beans are tender and the chicken is cooked through to an internal temperature of 165°F (74°C).
- Finish and Serve: Once baked, sprinkle freshly grated Parmesan cheese over the green beans and potatoes. Serve the sheet pan meal warm and enjoy!
Notes
- Pounding the chicken to an even thickness ensures it cooks evenly without drying out.
- Baby gold potatoes work best because they cook evenly and stay tender.
- You can substitute fresh green beans with asparagus or broccoli if preferred.
- For extra flavor, marinate the chicken breasts in honey garlic sauce for 30 minutes before baking.
- Use a meat thermometer to check that chicken reaches 165°F for safe consumption.
