Instructions

  1. Season: Place the chicken strips, sliced bell peppers, onion wedges, olive oil, fajita seasoning, and minced garlic into a very large Ziploc bag. Seal the bag tightly and shake well to evenly coat all ingredients with the seasoning. Refrigerate and marinate for 30 minutes to allow flavors to meld.
  2. Bake: Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with aluminum foil for easy cleanup, then spread the marinated chicken and vegetable mixture evenly on the pan. Bake in the oven for 15-20 minutes, stirring once halfway through to ensure even cooking and softness. Optionally, switch to the broiler for 2-3 minutes at the end to char the fajitas slightly for extra flavor.
  3. Finish: Remove the pan from the oven and transfer the fajita mixture to a serving dish. Toss the chicken and veggies with fresh lime juice and chopped cilantro to add brightness and freshness.
