Ingredients
Sausage and Vegetables
- 1 lb sausage (Italian, turkey, or chicken)
- 1 medium butternut squash, peeled and cubed (about 4 cups)
- 1 medium onion, chopped
- 3 cloves garlic, minced
Oils and Seasonings
- 2 tablespoons olive oil (divided, for roasting and sautéing)
- 1 teaspoon fresh thyme (optional)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Red pepper flakes (optional, for garnish)
Instructions
- Roast the Butternut Squash: Preheat your oven to 400°F (200°C). Toss the peeled and cubed butternut squash with 1 tablespoon of olive oil, salt, and pepper. Spread it evenly on a baking sheet and roast for 20-25 minutes until tender and caramelized.
- Cook the Sausage: While the squash roasts, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sausage, breaking it up into crumbles as it cooks. Cook for 8-10 minutes until the sausage is browned and cooked through. Remove the sausage from the skillet and set aside.
- Sauté Onion and Garlic: In the same skillet, add the chopped onion and sauté for 2-3 minutes until it begins to soften. Add the minced garlic and cook for another minute until fragrant, stirring frequently to avoid burning.
- Combine Ingredients: Add the roasted butternut squash to the skillet with onion and garlic. Return the cooked sausage to the skillet, stir well to combine, and add fresh thyme if using. Cook together for 5 minutes over medium heat to meld the flavors.
- Garnish and Serve: Remove the skillet from heat. Sprinkle freshly chopped parsley and red pepper flakes over the dish if desired. Serve the sausage and butternut squash hot as a satisfying one-pan meal.
