Instructions
- Preheat the oven: Set your oven to 240°C / 450°F (220°C fan) and place the oven shelf high inside to ensure even browning of the zucchini.
- Prepare the zucchini: Trim both ends off each zucchini. For medium zucchinis, cut each in quarters lengthwise. For large zucchinis, halve them lengthwise and then cut each half into three long wedges, giving six wedges per large zucchini.
- Toss with oil and seasoning: Place the cut zucchini pieces on a baking tray. Drizzle with 1 tablespoon of olive oil and sprinkle evenly with salt and pepper. Toss to coat all pieces thoroughly.
- Arrange zucchini on tray: Line the zucchini pieces up in two rows so that they are touching one another, placing them with the skin side down for optimal texture during baking.
- Add breadcrumbs and parmesan: Evenly sprinkle the zucchini with breadcrumbs, followed by grated parmesan cheese. Drizzle the remaining 1 tablespoon of olive oil over the top to help create a golden crust.
- Bake: Place the tray in the preheated oven and bake for 12 minutes until the parmesan turns golden and the zucchini is tender but maintains its shape without becoming soggy.
- Serve immediately: Remove from the oven and serve the baked zucchini right away for the best flavor and texture.
