Description

Delight in the festive flavor of these Pumpkin Pie Rice Krispie Treats, combining the classic marshmallow and crispy rice cereal base with autumnal pumpkin puree and warm spices. Perfectly chewy and bursting with pumpkin pie spice, these treats are an easy, seasonal twist on a beloved classic snack.

Ingredients

Scale

Base Layer

  • 2 Tbsp Butter (Salted)
  • 2 cups Mini Marshmallows
  • 1 tsp Maple Syrup
  • 2 ½ cups Rice Krispies

Pumpkin Spice Layer

  • 3 Tbsp Butter (Salted)
  • ½ tsp Pumpkin Pie Spice
  • â…› cup Pumpkin Puree
  • ¼ tsp Cinnamon
  • 3 cups Mini Marshmallows
  • 4 cups Rice Krispies
  • Orange food coloring (use enough to reach the desired color)

Instructions

  1. Prepare the Base Layer: In a large saucepan, melt 2 tablespoons of salted butter over low heat. Add 2 cups of mini marshmallows and stir until completely melted and smooth. Remove from heat and stir in 1 teaspoon of maple syrup. Immediately mix in 2 ½ cups of Rice Krispies cereal until evenly coated. Press this mixture firmly into a greased or parchment-lined 9×13 inch pan to form the base layer. Set aside to cool slightly.
  2. Make the Pumpkin Spice Layer: In the same saucepan, melt 3 tablespoons of salted butter over low heat. Stir in ½ teaspoon pumpkin pie spice and ¼ teaspoon cinnamon until fragrant. Add ⅛ cup pumpkin puree and mix well. Add 3 cups of mini marshmallows, stirring constantly until melted and smooth. Remove from heat, then add orange food coloring gradually until the desired vibrant pumpkin color is reached. Stir in 4 cups of Rice Krispies cereal until well coated.
  3. Assemble the Treats: Carefully spread the pumpkin spice Rice Krispies mixture evenly over the base layer in the pan. Press gently to compact the layers together. Allow the treat to cool completely at room temperature, about 20 minutes, to set.
  4. Cut and Serve: Once set, use a sharp knife to cut the treat into 6 large squares or 6 pieces as desired. Serve immediately or store in an airtight container for up to 2 days to maintain freshness.

Notes

  • Use salted butter for balanced flavor; unsalted can be substituted but add a pinch of salt if desired.
  • Adjust orange food coloring to your preferred shade for a fun presentation.
  • Press layers firmly but gently to avoid compressing too much and losing chewiness.
  • Store treats in an airtight container at room temperature for best texture.
  • Optional: Add a drizzle of white chocolate or sprinkle with crushed graham crackers for extra pumpkin pie flair.
