Ingredients
Frozen Yogurt Base
- 2 cups plain Greek yogurt (full fat)
- 1 cup canned pumpkin purée
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 1 1/2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Add-ins
- 3/4 cup chopped toasted pecans
Instructions
- Prepare the mixture: In a large mixing bowl, whisk together the Greek yogurt, pumpkin purée, brown sugar, maple syrup, pumpkin pie spice, vanilla extract, and salt until smooth and well combined.
- Chill the mixture: Cover the bowl and chill the mixture in the refrigerator for at least 1 hour to allow the flavors to meld and to ensure the base is cold for churning.
- Churn the frozen yogurt: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually for about 20–25 minutes, until thick and creamy.
- Add the pecans: In the last few minutes of churning, add the chopped toasted pecans to evenly distribute them throughout the frozen yogurt.
- Freeze until firm: Transfer the churned frozen yogurt to a freezer-safe container and freeze for 2–3 hours, or until firm enough to scoop.
- Serve: Before serving, let the frozen yogurt sit at room temperature for 5–10 minutes to soften slightly for easier scooping.
Notes
- For a dairy-free option, substitute Greek yogurt with coconut milk yogurt and ensure brown sugar used is vegan.
- To add extra sweetness, swirl in additional maple syrup or caramel sauce into the mixture before freezing.
- To toast pecans, spread them on a baking sheet and bake at 350°F (175°C) for 5–7 minutes until fragrant.
- Make sure the ice cream maker bowl is fully frozen before churning for best results.
