  • 2 medium russet potatoes, peeled and diced small
  • 1/2 small yellow onion, chopped
  • 1/2 bell pepper (any color), chopped

  • 1/4 teaspoon smoked paprika (optional)

Egg Mixture

  • 4 large eggs
  • 2 tablespoons milk

Other Ingredients

  • 2 tablespoons olive oil
  • 1/4 cup shredded cheddar cheese (optional)
  • 1 tablespoon chopped fresh parsley (for garnish)


Instructions

  1. Heat and Cook Potatoes: Heat the olive oil in a large nonstick skillet over medium heat. Add the diced potatoes and cook, stirring occasionally, for 8–10 minutes until they begin to soften and turn golden.
  2. Add Vegetables and Seasoning: Add the chopped onion and bell pepper to the skillet. Season everything with salt, pepper, garlic powder, and smoked paprika if using. Continue cooking for another 5–7 minutes until the vegetables are tender and the potatoes are crispy on the edges.
  3. Prepare Egg Mixture: In a separate bowl, whisk together the eggs and milk until fully combined.
  4. Cook and Scramble Eggs with Potatoes: Push the potato and vegetable mixture to one side of the skillet. Pour the egg mixture into the empty side and let it set slightly. Then gently scramble the eggs and mix them with the potato mixture until the eggs are fully cooked.
  5. Add Cheese and Garnish: Sprinkle shredded cheddar cheese over the scramble if using and stir just until melted. Remove the skillet from heat and garnish with chopped fresh parsley.
