Ingredients
For the Chicken:
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil, divided
For the Stir-Fry:
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup fresh pineapple chunks
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 2 green onions, sliced
- 1 tablespoon sesame seeds (optional)
Instructions
- Coat the Chicken: In a bowl, toss the chicken pieces with cornstarch until evenly coated.
- Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok. Add the chicken and cook until browned and cooked through. Remove chicken and set aside.
- Prepare the Stir-Fry: Add remaining oil to the skillet, sauté bell peppers, garlic, ginger, and pineapple. Whisk together soy sauce, rice vinegar, honey, and sesame oil. Return chicken to the skillet, pour in the sauce, and cook until heated through.
- Serve: Garnish with green onions and sesame seeds before serving.
