- 6 cups popcorn (air-popped or butter-free microwave)
Syrup Mixture
- 1/2 cup corn syrup
- 1/2 cup white sugar

- 1/2 cup peanut butter

- Pop the popcorn: Pop your popcorn as desired. Air-popped popcorn is best for this recipe, but butter-free microwave popcorn also works well.
- Prepare baking surface: Spray a cookie sheet with non-stick cooking spray and set it aside to prevent the popcorn from sticking once coated.
- Make syrup mixture: In a small saucepan over medium heat, combine the corn syrup and white sugar. Stir continuously until the sugar is completely melted and the mixture develops a caramel-like appearance, approximately 3 to 4 minutes.
- Add peanut butter: Stir the peanut butter into the syrup mixture until fully incorporated. Cook together for an additional one minute, then remove the saucepan from heat.
- Coat the popcorn: Immediately pour the peanut butter mixture over the popped popcorn. Stir well to ensure every piece is evenly coated with the peanut butter syrup.
- Set the popcorn: Spread the coated popcorn evenly over the prepared cookie sheet in a single layer. Allow it to set at room temperature for 4 hours or overnight until no longer sticky to the touch.
- Serve and store: Once set, break up the peanut butter popcorn into clusters or pieces. Store in an airtight container to maintain freshness until ready to enjoy.
