Ingredients
Pie:
- 1 pre-baked 9-inch pie crust
- 1 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 3 large egg yolks
- 2 cups whole milk
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter
Topping:
- Whipped cream (for topping, optional)
Instructions
- In a medium saucepan, whisk together the sugar, cocoa powder, flour, and salt. In a separate bowl, lightly beat the egg yolks and whisk in the milk.
- Gradually whisk the wet mixture into the dry ingredients in the saucepan. Cook over medium heat, whisking constantly, until the mixture thickens and begins to bubble, about 7–10 minutes.
- Remove from heat and stir in the vanilla extract and butter until smooth. Pour the chocolate filling into the pre-baked pie crust and smooth the top.
- Let cool slightly at room temperature, then refrigerate for at least 4 hours or until fully set. Serve chilled with whipped cream, if desired.

- To prevent lumps, whisk constantly while the filling cooks and avoid high heat.
- For a richer pie, use half-and-half instead of milk.
