Description

Indulge in the rich, sweet, and nutty flavors of these New Orleans Pecan Clusters. A classic Southern treat, these clusters are a perfect combination of toasted pecans, creamy caramel, and optional chocolate drizzle.

Ingredients

Scale

Pecan Clusters:

  • 2 cups pecan halves (toasted)
  • 1 cup granulated sugar
  • 1/2 cup heavy cream
  • 1/4 cup light corn syrup
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 ounces semi-sweet or milk chocolate (optional, for drizzling or dipping)

Instructions

  1. Prepare the Caramel Mixture: In a saucepan, combine sugar, heavy cream, corn syrup, butter, and salt. Cook until it reaches 235°F.
  2. Add Pecans: Stir in vanilla extract and toasted pecans. Drop spoonfuls onto a baking sheet.
  3. Cool and Set: Let the clusters cool and set at room temperature.
  4. Optional Chocolate Drizzle: Melt chocolate and drizzle over the clusters if desired.

Notes

  • To toast pecans, bake at 350°F for 7–8 minutes.
  • For a saltier-sweet version, sprinkle clusters with flaky sea salt before they set.
