This Molasses Date & Mandarin Loaf is a moist, flavorful quick bread infused with warm spices, rich molasses, sweet dates, and fresh mandarin oranges. - 1 cup all-purpose flour (120 g)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger

Wet Ingredients
- 1/2 cup unsalted butter, softened (113 g)
- 1/2 cup brown sugar, packed (100 g)
- 1/4 cup molasses (60 ml)
- 2 large eggs
- 1 teaspoon vanilla extract
Additional Mix-ins
- 1 cup pitted dates, chopped (about 150 g)
- 1/2 cup mandarin orange segments, chopped (about 100 g)
- 1/2 cup chopped walnuts or pecans (optional) (about 60 g)
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×5 inch (23×13 cm) loaf pan or line it with parchment paper to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, salt, ground cinnamon, ground ginger, and ground nutmeg until evenly combined. Set aside.
- Cream Butter and Sugar: In a large mixing bowl, cream the softened unsalted butter and brown sugar together using a mixer or whisk until the mixture becomes light and fluffy, about 3 to 4 minutes.
- Add Molasses, Eggs, and Vanilla: Beat in the molasses, one at a time add the eggs, and stir in the vanilla extract until the mixture is smooth and well blended.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, mixing gently and just until combined to avoid overmixing.
- Fold in Dates, Mandarins, and Nuts: Carefully fold in the chopped dates, mandarin orange segments, and the optional chopped walnuts or pecans until they are evenly distributed throughout the batter.
- Transfer to Pan: Pour the batter into the prepared loaf pan. Use a spatula to smooth the top evenly.
- Bake the Loaf: Place the loaf pan in the preheated oven and bake for 50 to 60 minutes. Check doneness by inserting a toothpick into the center—if it comes out clean or with just a few moist crumbs, the loaf is ready.
- Cool the Loaf: Remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then transfer the loaf onto a wire rack to cool completely.
- Slice and Serve: Once fully cooled, slice the loaf and serve plain or with butter as desired.

- You can substitute walnuts for pecans or omit nuts altogether if preferred.
