Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×5 inch (23×13 cm) loaf pan or line it with parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, salt, ground cinnamon, ground ginger, and ground nutmeg until evenly combined. Set aside.
  3. Cream Butter and Sugar: In a large mixing bowl, cream the softened unsalted butter and brown sugar together using a mixer or whisk until the mixture becomes light and fluffy, about 3 to 4 minutes.
  4. Add Molasses, Eggs, and Vanilla: Beat in the molasses, one at a time add the eggs, and stir in the vanilla extract until the mixture is smooth and well blended.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, mixing gently and just until combined to avoid overmixing.
  6. Fold in Dates, Mandarins, and Nuts: Carefully fold in the chopped dates, mandarin orange segments, and the optional chopped walnuts or pecans until they are evenly distributed throughout the batter.
  7. Transfer to Pan: Pour the batter into the prepared loaf pan. Use a spatula to smooth the top evenly.
