Description

Mint Chocolate Lasagna is a no-bake, layered dessert featuring a chocolate cookie crust, creamy mint-flavored filling, and a topping of whipped cream dusted with cocoa powder. This refreshing treat combines rich chocolate and cool mint flavors, making it perfect for serving chilled on warm days or at parties.

Ingredients

Scale

Crust

  • 24 chocolate sandwich cookies, crushed
  • 1/2 cup unsalted butter, melted

Filling

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 8 oz whipped topping
  • 1 tsp mint extract

Topping

  • Remaining whipped topping (from the 8 oz)
  • 2 tbsp cocoa powder for dusting

Instructions

  1. Prepare the crust: Preheat the oven to 350°F (175°C). Mix the crushed chocolate sandwich cookies with melted butter until well combined. Firmly press this mixture into the bottom of a baking dish to form an even crust layer. Bake for 8-10 minutes, then remove from oven and cool completely.
  2. Make the mint filling: In a mixing bowl, beat the softened cream cheese and powdered sugar together until the mixture is smooth and creamy. Gently fold in half of the whipped topping until evenly combined.
  3. Flavor the filling: Stir in the mint extract into the cream cheese mixture, adjusting the amount to your taste preference. Spread half of this mint-flavored mixture evenly over the cooled crust layer.
  4. Add middle layer: Sprinkle another layer of crushed chocolate sandwich cookies evenly over the mint filling layer, then spread the remaining mint cream mixture on top of the cookie layer, smoothing it out evenly.
  5. Top and chill: Spread the remaining whipped topping evenly over the final layer, then dust the top with cocoa powder for decoration. Cover and chill the lasagna in the refrigerator for at least four hours or overnight to set properly.
  6. Serve: Slice the Mint Chocolate Lasagna into portions and serve chilled for a refreshing and creamy dessert experience.

Notes

  • For best results, use full-fat cream cheese and whipped topping for a richer texture.
  • The mint extract can be adjusted to taste; start with 1 teaspoon and add more if desired.
  • Allow the dessert to chill thoroughly to ensure clean slicing and firm layers.
  • This recipe is best served cold straight from the refrigerator.
  • Crushing cookies in a food processor will yield finer crumbs for a more compact crust.
