Description

This Mexican Pizza recipe features crispy flour tortillas layered with refried beans, seasoned ground beef, enchilada sauce, and melted cheeses, then topped with fresh diced tomatoes, black olives, and green bell peppers. Ready in just 16 minutes, it’s a flavorful and satisfying dish perfect for a quick weeknight dinner or a fun party meal.

Ingredients

Scale

Base and Protein

  • 6 medium flour tortillas
  • 15 ounces refried beans
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons oil, divided
  • 12 ounces ground beef
  • 1 tablespoon taco seasoning
  • 1/2 cup enchilada sauce

Cheeses

  • 1 cup mozzarella cheese
  • 1 cup Mexican shredded cheese

Fresh Toppings

  • 1/2 cup tomatoes, diced
  • 2 tablespoons black olives, sliced
  • 1/2 large green bell pepper, diced

Instructions

  1. Prepare the Ground Beef Mixture: In a non-stick pan, heat 1 tablespoon of oil over medium heat. Add the diced onion and minced garlic and cook until fragrant. Add the ground beef and taco seasoning, stirring occasionally until the beef is browned and no longer pink. Set aside.
  2. Preheat the Oven: Preheat your oven to 200°C (400°F). Line two large baking sheets with parchment paper for easy cleanup.
  3. Crisp the Tortillas: Heat the remaining 1 tablespoon of oil in another pan. Crisp up the tortillas on both sides until golden brown to create a sturdy and delicious base for the pizza.
  4. Assemble the Pizza: On a prepared baking sheet, place one tortilla as the base. Spread a generous layer of refried beans over it, followed by some of the ground beef mixture. Place a second tortilla on top, spread with enchilada sauce, then sprinkle evenly with about one-third of both the mozzarella and Mexican shredded cheeses, leaving a small border around the edges to prevent cheese spillage. Repeat this assembly for the remaining tortillas to create multiple pizzas.
  5. Bake the Pizza: Place the assembled pizzas in the preheated oven and bake for 10-12 minutes, or until the cheese has fully melted and is bubbly.
  6. Add Fresh Toppings: Remove the pizzas from the oven and garnish with diced tomatoes, sliced black olives, and chopped green bell peppers. Optionally, add a dollop of sour cream on top for extra flavor and creaminess.

Notes

  • Use medium flour tortillas to ensure the perfect crispness and size for the pizza.
  • Adjust the amount of taco seasoning to your preferred spice level.
  • For a vegetarian version, substitute ground beef with plant-based crumbles or extra beans.
  • Serve with sour cream or guacamole for added creaminess and flavor.
  • Leftover pizzas can be stored in the fridge for up to 2 days and reheated in the oven for best results.
