Description

This Loaded Cowboy Cheeseburger Casserole is a hearty and flavorful twist on a classic cheeseburger, featuring ground beef, bacon, cheese, and pasta all baked together for a satisfying meal.

  • 1 pound ground beef
  • 1/2 pound bacon, chopped
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 (10 oz) can diced tomatoes with green chilies, drained
  • 1/2 cup barbecue sauce

Additional Ingredients:

  • 3 cups cooked elbow macaroni or rotini pasta
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup sour cream
  • 1/4 cup chopped pickles or jalapeños (optional)
  • Green onions for garnish


Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C).
  2. Cook Bacon: In a large skillet, cook chopped bacon until crispy. Remove and set aside.
  3. Cook Beef Mixture: Brown ground beef in the skillet. Add onion, garlic, paprika, salt, pepper, and Worcestershire sauce. Stir in tomatoes and barbecue sauce. Remove from heat.
  4. Combine Ingredients: In a bowl, mix pasta with beef mixture, 1 cup of cheese, sour cream, and half the bacon. Transfer to a baking dish.
  5. Bake: Top with remaining cheese and bacon. Bake for 15–20 minutes until bubbly.
  6. Serve: Garnish with pickles or jalapeños and green onions before serving.

Notes

  • Try using tater tots instead of pasta for a different twist.
  • For extra heat, add hot sauce or chipotle powder to the dish.
