These Loaded Cheesy Pocket Tacos are a delicious twist on traditional tacos, with a crispy baked shell filled with seasoned beef, gooey cheese, and all your favorite toppings. Perfect for a fun family dinner or easy meal prep.
Ingredients
For the seasoned beef:
1 pound ground beef, 1 tablespoon taco seasoning, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon salt, 1/4 cup water.
For the filling:
1 cup shredded cheddar cheese, 1/2 cup shredded Monterey Jack cheese, 1/4 cup sour cream, 1/4 cup salsa, 1/2 cup shredded lettuce, 1/2 cup diced tomatoes, 1/4 cup chopped red onion.
Additional:
8 small flour tortillas, 2 tablespoons butter (melted), optional toppings: sliced jalapeños, chopped cilantro, hot sauce.
Instructions
- Preheat the oven: Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Cook the beef: In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Season the beef: Stir in taco seasoning, garlic powder, onion powder, salt, and water. Simmer until thickened.
- Fill the tortillas: Spoon seasoned beef onto one half of each tortilla. Top with cheeses, sour cream, salsa, lettuce, tomatoes, and onion.
- Create pockets: Fold tortillas in half, press edges to seal. Brush with melted butter.
- Bake: Place on baking sheet and bake for 10–12 minutes until golden and cheese is melted.
- Serve: Enjoy warm with optional toppings.
