Ingredients
Chicken
- 1½ pounds boneless skinless chicken breasts
Rice Mixture
- 2 cups Minute Rice (white or brown)
- 1 can cream of mushroom soup (10.5 oz)
- 1 can cream of chicken soup (10.5 oz)
- 1 can water (use one of the soup cans to measure)
Seasoning and Other
- 1 envelope Lipton Onion Soup Mix
- 1 tbsp butter (for greasing the dish)
Instructions
- Preheat and Prepare Dish: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish thoroughly with 1 tablespoon of butter to prevent sticking and add flavor.
- Mix The Base: In a medium bowl, combine 2 cups of Minute Rice, 1 can each of cream of mushroom soup and cream of chicken soup, and one can of water. Stir well until everything is fully incorporated and creamy. Pour this mixture evenly into the greased baking dish.
- Arrange Chicken and Season: Place the 1½ pounds of boneless skinless chicken breasts on top of the rice and soup mixture in the dish. Evenly sprinkle 1 envelope of Lipton Onion Soup Mix over the chicken breasts for seasoning and flavor enhancement.
- Cover and Bake: Cover the baking dish tightly with aluminum foil to keep moisture in during cooking. Bake in the preheated oven for 1 to 1½ hours or until the chicken is fully cooked through and tender, and the rice mixture is bubbly.
Notes
- You can use either white or brown Minute Rice based on preference; cooking time remains the same.
- For best results, ensure the chicken reaches an internal temperature of 165°F (74°C) before serving.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
- Feel free to add vegetables like peas or carrots for added nutrition and color.
- If you prefer a less creamy texture, reduce the amount of soup by half or substitute with broth.
