Description

Delicious and comforting Layered Zucchini Ricotta Melts with Marinara, featuring roasted zucchini slices layered with creamy ricotta and mozzarella cheeses, seasoned with garlic and herbs, and baked to bubbly, golden perfection. A flavorful, low-carb, vegetarian, and gluten-free Italian-inspired main course perfect for a healthy and satisfying meal.

Ingredients

Scale

Zucchini and Seasoning

  • 2 medium zucchinis, sliced lengthwise into 1/4-inch thick strips
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Cheese Mixture

  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried basil

Additional Ingredients

  • 1 1/2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat and Prepare Zucchini: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Brush the zucchini slices on both sides with olive oil, then season evenly with salt and black pepper. Arrange them on the baking sheet for roasting.
  2. Roast Zucchini: Roast the zucchini slices in the preheated oven for 10 to 12 minutes, flipping them halfway through. Roast until they are just tender but not soggy. Remove from oven and set aside.
  3. Mix Cheese Filling: In a small bowl, combine ricotta cheese, grated Parmesan, garlic powder, and dried basil. Stir well until all ingredients are evenly mixed, creating a flavorful ricotta mixture.
  4. Assemble the Layers: Spread a spoonful of marinara sauce across the bottom of a small baking dish. Start layering with roasted zucchini strips, then spread a portion of the ricotta mixture on top, followed by another spoonful of marinara and a sprinkle of shredded mozzarella. Continue layering these ingredients until all are used, finishing with marinara sauce and mozzarella cheese on the top layer.
  5. Bake the Dish: Place the assembled dish in the oven and bake uncovered for 20 to 25 minutes or until the sauce is bubbly and the cheese on top is golden and melted.
  6. Cool and Garnish: Remove from the oven, let it cool for about 5 minutes to set slightly, then garnish with fresh basil leaves before serving. This adds a fresh, aromatic touch to the dish.

Notes

  • For an extra kick, add a pinch of red pepper flakes to the ricotta cheese mixture.
  • You can grill the zucchini slices instead of roasting for a smoky flavor.
  • Serve with crusty bread or a fresh side salad to complete the meal.
