Perfect for dinner, this recipe offers a unique taste experience that impresses at any gathering, served best alongside jasmine rice and cucumber salad.

Ingredients

Scale

Meatloaf Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 egg
  • 1/4 cup milk
  • 2 tbsp soy sauce
  • 1 tbsp gochujang (Korean chili paste)
  • 1 tbsp sesame oil
  • 2 tbsp brown sugar
  • 1 tsp grated ginger
  • Salt and pepper to taste

Glaze

  • 2 tbsp ketchup
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tsp rice vinegar

Optional Sides

  • Cooked jasmine rice
  • Cucumber salad

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the meatloaf.
  2. Prepare Meat Mixture: In a large bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, egg, milk, soy sauce, gochujang, sesame oil, brown sugar, grated ginger, salt, and pepper. Mix thoroughly using your hands or a spoon until all ingredients are evenly incorporated.
  3. Shape Meatloaf: Transfer the meat mixture to a loaf pan or shape it into a loaf on a baking sheet lined with parchment paper.
  4. Make Glaze: In a small bowl, whisk together ketchup, soy sauce, brown sugar, and rice vinegar until smooth.
  5. Glaze Meatloaf: Brush half of the glaze evenly over the surface of the meatloaf to create a flavorful crust while baking.
  6. Bake: Place the meatloaf in the oven and bake for 30 minutes. After 30 minutes, brush the remaining glaze over the meatloaf and continue baking for an additional 8 minutes or until the internal temperature reaches 160°F (71°C).
  7. Rest and Serve: Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Serve warm with fluffy jasmine rice and a side of cucumber salad for a refreshing contrast.

Notes

  • For a lighter option, substitute ground turkey or a plant-based meat alternative.
  • Add finely chopped vegetables like bell peppers or carrots into the meat mixture for extra nutrition and flavor.
  • Ensure the internal temperature of the meatloaf reaches at least 160°F (71°C) to ensure it is fully cooked.
  • Leftovers can be refrigerated for up to 3 days and reheated thoroughly before serving.
