Ingredients
Dry Ingredients:
- 2 cups all-purpose flour
- 1 cup shredded coconut (preferably fresh or desiccated)
- 1 cup brown sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon salt
- 2 teaspoons baking powder
Wet Ingredients:
- ½ cup unsalted butter, melted
- 1 cup coconut milk
- 1 teaspoon vanilla extract
- 1 egg, lightly beaten
Instructions
- Preheat and Prepare: Preheat the oven to 350°F and grease an 8×8-inch baking dish or line it with parchment paper.
- Mix Dry Ingredients: In a large bowl, combine the flour, shredded coconut, brown sugar, cinnamon, nutmeg, salt, and baking powder. Mix well.
- Combine Wet Ingredients: In another bowl, whisk together the melted butter, coconut milk, vanilla extract, and egg.
- Mix Batter: Pour the wet ingredients into the dry ingredients and mix until just combined.
- Bake: Pour the batter into the prepared pan, spread evenly, and bake for 35–40 minutes until a toothpick inserted in the center comes out clean.
- Cool and Serve: Allow the cake to cool in the pan before slicing into squares and serving.
