Ingredients
Chicken
- 2 pounds boneless, skinless chicken thighs
- Salt, to taste
- Black pepper, to taste
- Chili powder, to taste
- Olive oil, for cooking
Sauce and Garnish
- ½ cup peach preserves
- 2 yellow peaches, sliced
- 1 tablespoon soy sauce
- 1 teaspoon apple cider vinegar
- 1 teaspoon Dijon mustard
- ½ teaspoon minced garlic
- Fresh jalapenos, sliced for garnish
- Salt and pepper, to taste
- Red pepper flakes, to taste
Instructions
- Season the Chicken: Season the boneless, skinless chicken thighs generously with salt, black pepper, and chili powder to enhance the flavor and add a mild spice.
- Cook Chicken: Heat olive oil in a skillet over medium heat. Place the seasoned chicken thighs into the skillet and cook for 6 to 8 minutes on each side until they are golden brown and fully cooked through. Remove the chicken from the skillet and set aside.
- Prepare the Sauce: In the same skillet, add the sliced yellow peaches and sauté until they soften. Then, stir in peach preserves, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, pepper, and red pepper flakes. Let the mixture simmer until it thickens into a glaze.
- Combine and Serve: Return the cooked chicken thighs to the skillet and coat them evenly with the peach glaze. Top with fresh sliced jalapenos for an added spicy kick just before serving.
Notes
- Adjust the amount of jalapenos based on your preferred spice level.
- Use skinless chicken thighs for juicy, tender meat and even cooking.
- This dish pairs well with steamed rice or a fresh green salad.
- Peach preserves add natural sweetness but can be replaced with apricot preserves in a pinch.
- For a gluten-free version, substitute soy sauce with tamari.
