Description
This Instant Pot Keto Tuscan Soup is a creamy, hearty, and comforting low-carb soup featuring Italian sausage, fresh spinach, and rich Parmesan cheese. Perfect for a quick and satisfying meal, it combines robust flavors and wholesome ingredients cooked efficiently in an Instant Pot.
Ingredients
Main Ingredients
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 pound Italian sausage, casings removed
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 cup heavy cream
- 2 cups fresh spinach, chopped
- 1 teaspoon Italian seasoning
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- ¼ cup grated Parmesan cheese (plus more for serving)
Instructions
- Sauté Onions: Set the Instant Pot to sauté mode and heat the olive oil. Add the diced onion and cook for about 3 minutes until softened and translucent.
- Cook Sausage and Garlic: Add the minced garlic and Italian sausage to the pot. Break the sausage apart with a spoon and cook until browned, about 5 to 7 minutes.
- Add Broth and Tomatoes: Pour in the chicken broth and diced tomatoes with their juice. Stir the mixture to combine all the ingredients evenly.
- Pressure Cook: Secure the Instant Pot lid and set the valve to sealing. Cook on high pressure for 10 minutes to allow flavors to meld.
- Release Pressure and Add Cream: Carefully perform a quick release of the pressure. Open the lid and stir in the heavy cream, chopped spinach, Italian seasoning, salt, black pepper, and Parmesan cheese.
- Simmer and Finish: Switch the Instant Pot back to sauté mode and simmer the soup for an additional 5 minutes. This heats the soup thoroughly and wilts the spinach perfectly.
- Serve: Ladle hot soup into bowls and garnish with extra Parmesan cheese as desired.
Notes
- Adjust salt to taste, especially if using a salted chicken broth.
- For a spicier kick, add red pepper flakes when sautéing garlic and sausage.
- This soup freezes well; reheat gently on the stovetop or microwave.
- Use fresh spinach for best texture; baby spinach also works well.
- For dairy-free, substitute heavy cream and Parmesan with coconut cream and nutritional yeast (note this will alter the flavor).
