Ingredients
Chicken
- 4 medium-sized chicken thighs, skin and bone in (boneless optional)
Sauce
- ¼ cup soy sauce
- ¼ cup water
- ¼ cup ketchup (can substitute with passata or tomato sauce)
- 3 teaspoons garlic (minced, grated, or pressed)
- ¼ cup honey
- 1 teaspoon ginger (grated)
Thickener
- 3 tablespoons cornstarch
- 2 tablespoons water
Garnish
- Sesame seeds
- Green onion/scallions, sliced
Instructions
- Prepare Slow Cooker and Combine Ingredients: Spray a 4-quart slow cooker or crock pot with cooking oil. Place the chicken thighs and all sauce ingredients (soy sauce, water, ketchup, garlic, honey, and ginger) into the cooker, excluding the cornstarch and additional water.
- Slow Cook the Chicken: Cook the mixture on HIGH for 2 to 3 hours or on LOW for 4 to 5 hours. Check the internal temperature of the chicken; it should reach 165°F for safe consumption.
- Remove Chicken: Take the chicken thighs out of the slow cooker, leaving the sauce behind in the pot.
- Make Cornstarch Slurry: In a small bowl, combine 3 tablespoons of cornstarch with 2 tablespoons of water to create a slurry. Slowly whisk this into the hot sauce in the slow cooker until fully incorporated.
- Thicken the Sauce: Continue cooking the sauce on the HIGH setting for another 10 to 15 minutes, stirring occasionally, until the sauce thickens nicely.
- Reassemble and Serve: Return the chicken thighs to the slow cooker, basting them with the thickened sauce. Garnish with sesame seeds and chopped green onions before serving.
Notes
- You can use boneless chicken thighs if preferred for quicker cooking and easier eating.
- Adjust the amount of honey depending on your desired sweetness level.
- For a gluten-free version, substitute soy sauce with tamari or coconut aminos.
- The cooking time may vary slightly depending on slow cooker model and chicken size; always use a meat thermometer.
- Serve this dish with steamed rice or vegetables for a complete meal.
