Pancake Batter

  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter

Sandwich Fillings

  • ½ cup cooked breakfast sausage patties (4 small patties)
  • 4 slices American cheese
  • 4 large eggs
  • 1 tablespoon butter or oil for cooking


Instructions

  1. Prepare the batter: In a bowl, whisk together the flour, sugar, baking powder, and salt to combine the dry ingredients evenly. In another bowl, whisk milk, egg, maple syrup, vanilla extract, and melted butter until smooth and well combined. Pour the wet ingredients into the dry and gently mix just until the batter is smooth without overmixing.
  2. Cook the pancakes: Heat a nonstick skillet or griddle over medium heat and lightly grease it. Pour 2 to 3 tablespoons of batter at a time into rounds approximately the size of English muffins. Cook until bubbles form on the surface and edges look set, then flip and cook the other side until golden brown. Remove pancakes and keep warm.
  3. Cook the sausage patties: In the same skillet, brown the sausage patties over medium heat until fully cooked through and nicely caramelized, or reheat pre-cooked patties until warm and lightly crisped.
  4. Cook the eggs: Use egg rings or cook freestyle in the skillet with a little butter or oil. Cook eggs until the whites are set; flip if you desire fully cooked yolks. Remove from heat once done.
  5. Assemble the sandwiches: Layer one pancake as the base, then add a slice of American cheese, a cooked sausage patty, and a cooked egg. Top with the second pancake to complete the sandwich. Serve warm with optional maple syrup drizzled on top for added sweetness.
