For the Soup:

  • 3 tablespoons unsalted butter
  • 1/2 cup finely chopped onion
  • 2 cloves garlic (minced)
  • 1/3 cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1 1/2 cups cooked shredded chicken
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon poultry seasoning (optional)
  • Chopped fresh parsley for garnish (optional)


Instructions

  1. In a large saucepan, melt butter over medium heat. Add the chopped onion and cook for 3–4 minutes until softened.
  2. Stir in garlic and cook for another 30 seconds. Sprinkle in the flour and whisk constantly for 1–2 minutes to form a roux.
  3. Slowly pour in the chicken broth, whisking to remove any lumps. Add the milk and heavy cream, stirring until smooth.
  4. Bring to a simmer and cook for 5–7 minutes, or until the soup thickens. Stir in the shredded chicken, salt, pepper, thyme, and poultry seasoning if using.
  5. Simmer for another 5 minutes to allow flavors to combine. Adjust seasoning to taste. Garnish with parsley and serve warm.

Notes

  • This soup can be used as a substitute for canned cream of chicken in recipes (use 1 1/4 cups per can).
  • For a lighter version, substitute whole milk for the cream and use less butter.
  • Freezes well for up to 3 months.
