Creamy Garlic Parmesan Potatoes

  • 1 1/2 lbs baby potatoes (or regular potatoes, cubed)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • Salt and pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)


Instructions

  1. Prepare the chicken marinade: In a medium bowl, whisk together honey, BBQ sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken breasts and coat them well with the marinade. Allow to marinate for at least 10 minutes; longer if time permits for more flavor.
  2. Cook the chicken: Heat a large skillet or grill pan over medium heat. Add the marinated chicken breasts and cook for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from heat and let rest.
