Ingredients
Zucchini Fries
- 2 medium zucchinis
Coating Mixture
- 1 cup almond flour
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Egg Wash
- 2 large eggs
Instructions
- Preheat the air fryer: Set your air fryer to 400°F (200°C) and allow it to preheat while you prepare the zucchini fries.
- Slice the zucchinis: Cut the zucchinis into fry-shaped sticks, about 3-4 inches long and 1/2 inch thick.
- Prepare the coating mixture: In a bowl, combine the almond flour, grated Parmesan cheese, garlic powder, paprika, salt, and pepper. Mix well to distribute the seasonings evenly.
- Beat the eggs: In a separate bowl, beat the two eggs thoroughly to create an egg wash for coating.
- Coat the zucchini fries: Dip each zucchini stick into the beaten eggs to moisten, then dredge in the almond flour mixture, pressing lightly to ensure the coating sticks well.
- Arrange fries in the air fryer: Place the coated zucchini fries in a single layer in the air fryer basket, making sure they are not touching for even crisping.
- Air fry the zucchini fries: Cook at 400°F for 12-15 minutes, flipping the fries halfway through the cooking time to achieve a golden brown and crispy exterior.
- Serve: Remove the fries from the air fryer and serve warm with your favorite dipping sauce like marinara, ranch, or a spicy aioli.
Notes
- For extra crispy fries, you can spray a little cooking oil on the fries before air frying.
- Make sure not to overcrowd the air fryer basket to ensure even cooking and crispiness.
- Substitute Parmesan with Pecorino Romano for a sharper flavor.
- These fries can be enjoyed as a low-carb snack or a healthy side dish.
- Store leftovers in the refrigerator and reheat in the air fryer for best texture.
