This meal is hearty, colorful, and sure to enchant guests of all ages with its seasonal charm.

Ingredients

Scale

Main Ingredients

  • 1 pound ground turkey
  • 1 bag microwave brown rice (about 1 ½ cups cooked)
  • 4 bell peppers (orange, red or green)
  • 2 16 oz. cans tomato sauce
  • 1 tablespoon Worcestershire sauce
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Salt and pepper (to taste)
  • 1 teaspoon Italian seasoning
  • 1 cup mozzarella cheese, shredded

Instructions

  1. Preheat the Oven: Set your oven to 350 degrees F (175 degrees C) to prepare it for baking your stuffed peppers.
  2. Brown the Turkey: In a skillet over medium heat, cook the ground turkey until browned and no longer pink, then drain excess fat carefully.
  3. Prepare the Bell Peppers: Cut off the tops of the bell peppers and remove all seeds and membranes. Using a sharp knife, carve fun pumpkin faces into each pepper to create a festive Halloween look. Save the tops for presentation.
  4. Arrange Peppers: Place the hollowed-out peppers upright in a baking dish, making sure they stand securely with the carved faces visible.
  5. Make the Filling: In a large bowl, combine the browned ground turkey, cooked brown rice, 1 ½ cans of tomato sauce, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix well to combine all flavors evenly.
  6. Stuff the Peppers: Spoon an equal amount of the meat and rice mixture into each hollowed pepper, filling them generously.
  7. Prepare Sauce and Top the Peppers: Mix the remaining ½ can tomato sauce with Italian seasoning, then pour this mixture evenly over the stuffed peppers. Sprinkle the shredded mozzarella cheese on top for a melty, cheesy finish.
  8. Bake: Place the baking dish in the preheated oven and bake for 45 minutes, or until the peppers are tender and the cheese is melted and slightly golden.

Notes

  • You can substitute ground beef for ground turkey if preferred.
  • Use any color bell peppers for varied appearance, but orange and red give the most Halloween vibes.
  • Microwave brown rice according to package instructions before using.
  • Carving pumpkin faces is optional but adds fun a festive touch for Halloween.
  • Be sure to drain the cooked turkey well to avoid soggy filling.
  • For a spicier twist, add a pinch of cayenne pepper or red pepper flakes to the filling mixture.
  • Leftovers can be refrigerated up to 3 days and reheated in the oven or microwave.
