Description

A hearty and comforting Ground Beef and Potatoes Casserole featuring seasoned ground beef layered with tender sliced potatoes, onions, and a creamy mixture of sour cream and cheeses, baked to golden perfection. This dish combines savory flavors with a creamy texture, making it a perfect family meal for any night.

Ingredients

Scale

Ground Beef Mixture

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 tablespoon olive oil

Potatoes

  • 4 medium potatoes, sliced

Creamy Topping

  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat and cook beef: Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, draining any excess fat.
  2. Sauté onions and garlic: Add the diced onion and minced garlic to the skillet with the beef. Cook for about 2 minutes, stirring constantly, until the onion is softened and translucent without burning.
  3. Add seasoning: Stir in paprika, dried thyme, dried oregano, salt, and black pepper. Cook for an additional 1-2 minutes to allow the spices to blend with the beef mixture.
  4. Mix creamy topping: In a separate bowl, combine sour cream, shredded cheddar cheese, grated Parmesan cheese, and milk, mixing well until smooth.
  5. Prepare baking dish: Preheat the oven to 375°F (190°C) and lightly grease a baking dish with non-stick cooking spray or olive oil.
  6. Layer beef and potatoes: Spread half of the cooked ground beef mixture evenly on the bottom of the prepared dish. Then add a layer of sliced potatoes evenly over the beef layer.
  7. Add creamy mixture: Pour and spread half of the sour cream and cheese mixture over the potatoes. Repeat layering with the remaining beef, then the remaining sliced potatoes, and finally top with the remaining creamy mixture.
  8. Cover and bake: Cover the casserole tightly with aluminum foil and bake in the preheated oven for 30 minutes.
  9. Uncover and finish baking: Remove the foil and bake for another 20-25 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.
  10. Rest and serve: Remove the casserole from the oven and let it sit for about 5 minutes before serving. Optionally, sprinkle extra cheddar cheese on top to add more flavor and crispiness.

Notes

  • You can substitute cheddar cheese with mozzarella for a milder flavor.
  • For extra creaminess, add a little more milk to the sour cream mixture.
  • Be sure to slice potatoes evenly to ensure consistent cooking.
  • If you prefer a spicier dish, add a pinch of cayenne pepper to the beef mixture.
  • Leftovers can be refrigerated and reheated within 3 days.
