Ingredients
Chicken and Marinade
- 4 chicken breasts (about 1.5 lbs or 680 g)
- 1/4 cup (60 ml) soy sauce
- 2 tablespoons (30 g) brown sugar
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons (30 ml) lime juice
- Salt and pepper, to taste
Grilling
- 1 medium fresh pineapple, sliced into rings
- 1 tablespoon olive oil (for grilling)
- 2 green onions, chopped (for garnish)
Instructions
- Marinate the Chicken: In a bowl, combine the soy sauce, brown sugar, minced garlic, grated fresh ginger, and lime juice. Mix well until the sugar dissolves. Place the chicken breasts in the marinade, coating thoroughly. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse.
- Prepare the Pineapple: While the chicken marinates, slice the fresh pineapple into rings or chunks depending on your preference.
- Preheat and Oil the Grill: Heat your grill to medium-high heat. Once hot, brush the grill grates with olive oil to prevent sticking and to help with caramelization.
- Grill the Chicken: Remove chicken from the marinade and place on the grill. Grill each side for 6-7 minutes, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through with nice grill marks.
- Grill the Pineapple: Place the pineapple rings on the grill and cook for 3-4 minutes per side. Grill until the pineapple is caramelized with a slightly charred appearance but still juicy.
- Serve: Arrange the grilled chicken breasts and pineapple rings on a serving platter. Garnish with chopped green onions and drizzle with any remaining marinade if desired. Serve immediately for best flavor.
Notes
- Marinating the chicken longer than 30 minutes, up to 2 hours, will enhance the flavor even more.
- For a spicier variation, add some crushed red pepper flakes to the marinade.
- If you don’t have a grill, you can use a grill pan on the stovetop or broil the chicken and pineapple in the oven.
- Make sure to oil the grill grates well to prevent sticking, especially when grilling the pineapple.
- Check the internal temperature of the chicken with a meat thermometer to ensure it’s fully cooked and safe to eat.
