Description
A simple and flavorful Grilled Almond Asparagus recipe that combines tender asparagus with crunchy chopped almonds, butter, and a fresh splash of lemon juice. Perfect as a healthy side dish for any grilled meal.
Ingredients
Vegetables
- 1 bunch asparagus
Nuts
- 1/2 cup raw almonds
Others
- 2 tablespoons butter
- 1 tablespoon lemon juice
Instructions
- Preheat Grill: Preheat your grill to medium-high heat, preparing it for cooking the asparagus foil packet.
- Prepare Asparagus: Wash the asparagus thoroughly and trim off the bottom 1/2 inch to remove any tough or woody ends.
- Chop Almonds: Using a sharp knife, carefully coarsely chop the raw almonds to add a crunchy texture to the dish.
- Assemble Foil Packet: Lay a piece of tin foil roughly one foot long on a flat surface. Place the asparagus in the center, sprinkle the chopped almonds evenly over the top, then distribute the 2 tablespoons of butter, cut into 4 pieces, evenly on top of the almonds.
- Seal Foil Packet: Bring the long sides of the foil together at the top and gently roll down to create a tight closure. Next, roll each open side towards the center until the foil is completely sealed around the asparagus and almonds.
- Grill Packet: Place the sealed foil packet directly over the grill’s medium-high heat. Cook for 8 to 10 minutes until the asparagus is tender and infused with butter and almond flavors.
- Serve: Carefully unwrap the foil to avoid steam burns, sprinkle the grilled asparagus with fresh lemon juice for a bright, tangy finish, and serve immediately.
Notes
- Ensure the foil packet is sealed tightly to trap steam and cook the asparagus evenly.
- Use medium-high heat to prevent burning the butter or almonds.
- You can substitute butter with olive oil for a dairy-free option.
- Adjust lemon juice amount to taste for more or less acidity.
- For extra flavor, sprinkle salt and pepper before sealing the foil.
