Ingredients

- 1/2 cup buttermilk, at room temperature
- 1/2 teaspoon white vinegar
- 1 teaspoon vanilla extract
- 1 tablespoon green food coloring
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg, at room temperature
Instructions
- Preheat the oven: Preheat the oven to 350°F and line a 12-cup muffin tin with cupcake liners.
- Prepare dry and wet ingredients: Whisk together the dry ingredients in a bowl. Mix the buttermilk, vinegar, vanilla, and food coloring in a separate bowl.
- Cream butter and sugar: In a large bowl, cream the butter and sugar until light and fluffy. Add the egg and beat well.
- Combine mixtures: Alternate adding the flour mixture and buttermilk mixture to the creamed butter, starting and ending with the flour. Mix until just combined.
- Bake: Divide the batter into cupcake liners and bake for 18–20 minutes until a toothpick comes out clean.
- Cool and frost: Cool the cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely before frosting.
