Description

  • 1 teaspoon vanilla extract

  • 3/4 cup granulated sugar
  • 1 large egg, at room temperature


Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line a 12-cup muffin tin with cupcake liners.
  2. Prepare dry and wet ingredients: Whisk together the dry ingredients in a bowl. Mix the buttermilk, vinegar, vanilla, and food coloring in a separate bowl.
  3. Cream butter and sugar: In a large bowl, cream the butter and sugar until light and fluffy. Add the egg and beat well.
  4. Combine mixtures: Alternate adding the flour mixture and buttermilk mixture to the creamed butter, starting and ending with the flour. Mix until just combined.
  5. Bake: Divide the batter into cupcake liners and bake for 18–20 minutes until a toothpick comes out clean.
  6. Cool and frost: Cool the cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely before frosting.
