Instructions

  1. Preheat the broiler. Turn your oven broiler on high to prepare for caramelizing the grapefruit slices.
  2. Prepare the grapefruit. Peel the grapefruit and slice it into 1/2-inch thick slices. Remove the bitter pith carefully around the edges of each slice. For easier eating, cut the slices into quarters. Arrange the pieces in a single layer on a foil-lined baking sheet. Dab the top of each piece with a paper towel to remove excess moisture.
  3. Caramelize the grapefruit. Sprinkle a thin layer of brown sugar evenly on top of each grapefruit piece. Place the baking sheet under the hot broiler for about 8 minutes, or until the sugar bubbles and caramelizes without burning.
  4. Assemble the bowl. While the grapefruit is broiling, combine the Greek yogurt and muesli or granola in a serving bowl.
  5. Finish and serve. Once the grapefruit is caramelized, add the pieces on top of the yogurt mixture. If desired, sprinkle chopped fresh mint over the bowl, then drizzle honey to taste. Serve immediately to enjoy the contrast of warm grapefruit and cool yogurt.
