Ingredients
Sweet Potatoes
- 2 pounds Sweet Potatoes (Peeled and cubed into bite-sized pieces)
Seasonings & Garnish
- 4-5 cloves Garlic (Minced finely)
- ¾ cup Parmesan Cheese (Freshly grated)
- 3 tablespoons Olive Oil (Extra virgin for roasting)
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 2 tablespoons Fresh Parsley (Chopped, for garnish, optional)
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it’s ready for roasting the sweet potatoes.
- Prepare Sweet Potatoes: Wash and peel the sweet potatoes, then cut them into even 1-inch cubes to promote even cooking.
- Coat Sweet Potatoes: Place the cubed sweet potatoes in a large mixing bowl and drizzle with extra virgin olive oil. Toss thoroughly so each piece is evenly coated with oil.
- Add Seasonings: Sprinkle the salt, black pepper, and minced garlic over the sweet potatoes. Toss again to distribute the seasonings evenly.
- Add Parmesan Cheese: Sprinkle the freshly grated Parmesan cheese over the sweet potatoes and toss gently to help the cheese adhere well to the cubes.
- Prepare Baking Sheet: Line a baking sheet with parchment paper to prevent sticking, then spread the sweet potato mixture in a single layer for uniform roasting.
- Roast Sweet Potatoes: Place the baking sheet in the oven and roast for 25-30 minutes. Stir the sweet potatoes halfway through roasting to ensure even browning. They should be golden-brown and fork-tender when done.
- Garnish and Serve: Remove the roasted sweet potatoes from the oven. Optionally, sprinkle chopped fresh parsley on top, then serve immediately while hot and flavorful.
Notes
- Cut sweet potatoes into uniform cube sizes to ensure even cooking.
- Adjust garlic quantity according to your preference for more or less intensity.
- For a crispier texture, spread sweet potatoes in a single layer without crowding.
- Use freshly grated Parmesan for best flavor and melting properties.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven to retain crispness.
