Ingredients
Mashed Potatoes:
- 4 cups mashed potatoes (preferably made with butter and cream)
Other Ingredients:
- 1 cup freshly grated Parmesan cheese
- 2 cloves garlic, minced
- 1 large egg
- ¼ cup chopped fresh chives (optional)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Nonstick cooking spray
Instructions
- Preheat and Prepare: Preheat the oven to 400°F and lightly grease a 12-cup muffin tin with nonstick cooking spray.
- Mix Ingredients: In a large mixing bowl, combine mashed potatoes, Parmesan cheese, minced garlic, egg, salt, pepper, and chives. Stir until well mixed.
- Fill Muffin Cups: Spoon the mixture evenly into the muffin cups, pressing gently to shape each one. Top with extra Parmesan if desired.
- Bake: Bake for 25–30 minutes until golden brown and slightly crispy. Cool for 5 minutes before serving warm.
Notes
