Description

These Garlic Parmesan Mashed Potato Cups are a delightful twist on traditional mashed potatoes, baked to golden perfection in individual portions. Cheesy, garlicky, and easy to make, they’re perfect for a side dish or appetizer.

Mashed Potatoes:

  • 4 cups mashed potatoes (preferably made with butter and cream)

Other Ingredients:

  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 large egg
  • ¼ cup chopped fresh chives (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Nonstick cooking spray


Instructions

  1. Preheat and Prepare: Preheat the oven to 400°F and lightly grease a 12-cup muffin tin with nonstick cooking spray.
  2. Mix Ingredients: In a large mixing bowl, combine mashed potatoes, Parmesan cheese, minced garlic, egg, salt, pepper, and chives. Stir until well mixed.
  3. Fill Muffin Cups: Spoon the mixture evenly into the muffin cups, pressing gently to shape each one. Top with extra Parmesan if desired.
