Instructions
- Prepare Zucchini Noodles: Use a spiralizer or vegetable peeler to turn the zucchinis into noodles. Set them aside while you cook the other ingredients.
- Cook Chicken: Cut the chicken breasts into bite-sized pieces. Season with salt and pepper. Heat olive oil in a skillet over medium-high heat. Add the chicken pieces and cook until golden brown and fully cooked through, about 5-7 minutes. Remove from skillet and set aside.
- Sauté Vegetables and Garlic: In the same skillet, add sesame oil. Add minced garlic and sliced bell pepper. Sauté for 2-3 minutes until fragrant and slightly tender.
- Combine and Cook: Return the cooked chicken to the skillet. Add zucchini noodles and pour in soy sauce. Toss everything together and cook for an additional 2-3 minutes, just until zucchini noodles are tender but still crisp.
- Finish and Garnish: Remove from heat, stir in chopped green onions, and sprinkle with sesame seeds if using. Serve immediately for optimal texture and flavor.
